The seven Sussex things that make the South heaven If I could but forget the Amberley troutTrout Meuniere with Almonds
4 x fillets of trout
100g butter
1 lemon, juiced
50g flaked almonds
1 tbsp chopped parsley De-bone the fillets but leave the skin on. Melt the butter
in a hot pan. Season the skin of the trout and place in the pan, skin
side down. Cook until golden, then turn the trout over. Add the lemon
