SEVEN SUSSEX THINGS
The seven Sussex things that make the South heaven

Eel in a net

The oily, glutinous Pulborough eel

Garlic Eel
1 x eel, cut into four nice portions
75g butter
1 lemon Flour
1 tbsp chopped garlic

Skin and lightly flour the eel. In a hot pan, melt the butter before adding the eel and garlic and sauté until the fish is just coming off the bone. Add the lemon, then fresh parsley.
