The seven Sussex things that make the South heaven

Herring in a net

The herring of Rye is the tastiest dish

Herrings Lyonnaise
4 x herrings (filleted)
1 x white onion, sliced
200 g butter
40ml white wine vinegar
2 lemons, juiced
1 clove garlic, pureed

In a frying pan cook the sliced onion until golden. Remove onions. Flour the herring fillets. Add the butter to the pan until bubbling and cook the herring fillets until golden brown. Add the onions again, plus the vinegar, lemon juice and garlic. Bring to the boil, season and serve.
