SEVEN SUSSEX THINGS
The seven Sussex things that make the South heaven

Mullet

The mullet of Arundel would have my vote

Mullet with Basil Citrus Nage
4 x mullet fillets (pin boned)
2 x onions
1 x fennel bulb
2 x carrots
3 x cloves of garlic
4 x tomatoes concasse (peeled, seeded and diced)
½ bunch ripped basil
1 tbsp olive oil

Dice all the vegetables. Sweat in a hot pan, with olive oil until just beginning to go soft. Fill the pan with water, just below the vegetables and boil rapidly until cooked. Season, then add the ripped basil. Pan fry the mullet, serve the vegetable garnish in the centre of the bowl. Place mullet on the top and then spoon the stock around the fish.
