SEVEN SUSSEX THINGS
The seven Sussex things that make the South heaven

Bag of cockles

The Selsea cockle would be the best

Cockles Marinier
1kg cockles
4 chopped shallots
3 chopped garlic cloves
150ml white wine
pinch of saffron filaments
400mls of single cream
chopped parsley and chives for garnish
½ lemon

In a large pan heat the oil and gently sweat the garlic and shallots. Turn up the heat to full and add the cockles, white wine, cream and saffron and cover with a lid until all the shells are open. Finally, finish with a squeeze of lemon juice and sprinkle on chopped herbs.
