Ingredients

red onion |

a yellow pepper |

tbsp olive oil |

dozen cherry tomatoes |
Half
a medium pumpkin - deseeded |

carrot |

vegetable stock cubes |
| 1
average-sized potato |
Half
a mug of milk |
- Peel and chop vegetables into small chunks/ strips.
- Sweat
the red onion in olive oil until soft.
Add peppers, pumpkin, carrot and potato. and cook for 3-4 minutes
(stirring thoroughly).
- Now
add the vegetable stock and the cherry tomatoes. Cover and simmer
until vegetables are soft.
- Blend
until smooth, then add the milk and a little water until it is
at the desired consistency.
- Gently
heat then add salt and pepper to taste.
Serve on its own, with a little oregano, or even with some parmesan
cheese (add parmesan during final heating).
