1 1/2 Limes juiced
1 tsp Honey dissolved in a little boiling water
1 large bottle sparkling mineral water
50 ml Coconut milk
Ice cubes
1/2 ripe melon
Method
1. In a jug, add lime juice, dissolved honey and coconut milk, and stir well.
2. Using a melon baller or coffee spoon, scoop out approx 20 melon balls.
3. Divide melon balls into 4 tall glasses and add ice cubes.
4. Pour lime and coconut liquid over ice cubes and top with sparkling mineral water. Stir and finish with a twist of lime.
