 While the Belgian and Swiss were making truffles, using pralines and hazelnut in their chocolate, an Irish chocolatier was fusing the traditional with the new, taking English and Irish desert recipes such as sticky toffee pudding and lemon meringue pie - making them into chocolates and giving them a new twist.
