Maximum flavour but minimum effort, this fresh yet filling halloumi and chickpea salad comes together in under 10 minutes.

  1. Place the halloumi cubes in a large frying pan over a medium heat. Dry fry for 7–8 minutes, turning the cubes to cook evenly all over until golden brown. Set aside.

  2. Place the salad leaves in a large bowl. Add the cooked halloumi, tomatoes, chickpeas and tzatziki.

  3. Toss everything together to coat evenly in the tzatziki. Season with salt and pepper and serve immediately.
