Halloumi salad in a tzatziki dressing

Maximum flavour but minimum effort, this fresh yet filling halloumi and chickpea salad comes together in under 10 minutes.
Each serving provides 656 kcal, 41.8g protein, 31.4g carbohydrate (of which 9.4g sugars), 38.1g fat (of which 23g saturates), 8.5g fibre and 5g salt.
Ingredients
- 225g/8oz halloumi, patted dry and cut into small cubes
- 250g/9oz mixed green salad leaves
- 100g/3½oz cherry tomatoes, cut into quarters
- 100g/3½oz shop-bought crunchy chickpeas, any flavour you like
- 200g/7oz shop-bought tzatziki
- salt and freshly ground black pepper
Method
Place the halloumi cubes in a large frying pan over a medium heat. Dry fry for 7–8 minutes, turning the cubes to cook evenly all over until golden brown. Set aside.
Place the salad leaves in a large bowl. Add the cooked halloumi, tomatoes, chickpeas and tzatziki.
Toss everything together to coat evenly in the tzatziki. Season with salt and pepper and serve immediately.
