Mini Veggie Burgers and Salsa recipe

- 100g vegetarian mince
- 75g cooked and mashed sweet potato
- 1 spring onion
- 1 slice of bread
- 1 egg
- 15ml oil
- 10 cherry tomatoes
- 5 basil leaves
- 1 tablespoon olive oil
- Pinch of black pepper
How to make veggie burgers and salsa
These mini veggie burgers make a great lunchtime snack, picnic treat or tasty addition to a bbq. Despite their small size, they're packed with flavour, and are a great alternative to fattier shop-bought options.

Method
Don't forget to wash your hands before you start cooking.
Make the burgers
Ask a grown-up to preheat the oven to 200°C (or 180°C fan).
Finely chop the spring onion.
Put the spring onion, vegetarian mince, and mashed sweet potato into a mixing bowl.
Grate the bread into breadcrumbs and add them to the bowl.
Crack the egg into a cup and beat it with a fork.
Add the egg to the bowl.
Mix everything together with your hands.
Divide the mixture into 4 equal parts.
Roll each part into a ball, then flatten it into a burger shape.
Place the burgers on a baking tray.
Ask a grown-up to put the tray in the oven and bake for 18-20 minutes, until cooked through.
Make the salsa
Cut the cherry tomatoes into small pieces and put them in a cup or bowl.
Tear the basil leaves into small pieces and add them.
Add the olive oil and a pinch of black pepper.
Mix well with a spoon.
Serve the warm veggie burgers with the fresh tomato and basil salsa on the side.
