Tilly's Power Pancakes
These super-tasty motivational munches are so healthy, and packed with energy - the perfect meal for before a race!

You will need
- 3 skinless chicken breasts, cut into long, thin strips
- 2 cloves of garlic, peeled and grated
- 2cm piece of ginger, peeled and finely grated
- 2 tsp Chinese 5 spice
- 1 star anise
- 2 tbsp dark soy sauce
- 1 tbsp vegetable oil
- 18 Chinese pancakes
- 1 cucumber cut into long, thin strips
- 6 spring onions, cut into long, thin strips
- 125ml plum sauce
STEPS
Place chicken, garlic, ginger, Chinese 5 spice, star anise and soy sauce into a bowl. Mix well.
Heat the oil in a frying pan over medium to high heat. Once hot, add the chicken mixture and fry for 5-6 minutes until golden brown. Make sure to stir often, to prevent it from burning.
Make sure to remove the star anise!
TO SERVE
Heat the pancakes according to packet instructions.
To eat, top each pancake with a spoonful of plum sauce, a spoonful of chicken, a little cucumber and spring onion.
Roll up to eat - Til-licious!
