Tilly's Power Pancakes

These super-tasty motivational munches are so healthy, and packed with energy - the perfect meal for before a race!

Tilly's power pancakes.
You will need
  • 3 skinless chicken breasts, cut into long, thin strips
  • 2 cloves of garlic, peeled and grated
  • 2cm piece of ginger, peeled and finely grated
  • 2 tsp Chinese 5 spice
  • 1 star anise
  • 2 tbsp dark soy sauce
  • 1 tbsp vegetable oil
  • 18 Chinese pancakes
  • 1 cucumber cut into long, thin strips
  • 6 spring onions, cut into long, thin strips
  • 125ml plum sauce

STEPS

  • Place chicken, garlic, ginger, Chinese 5 spice, star anise and soy sauce into a bowl. Mix well.

  • Heat the oil in a frying pan over medium to high heat. Once hot, add the chicken mixture and fry for 5-6 minutes until golden brown. Make sure to stir often, to prevent it from burning. 

  • Make sure to remove the star anise!

TO SERVE

  • Heat the pancakes according to packet instructions.

  • To eat, top each pancake with a spoonful of plum sauce, a spoonful of chicken, a little cucumber and spring onion. 

  • Roll up to eat - Til-licious!
