Tilly's Airy Apricot Fool

Try out this delicious Italian Apricot Fool. This is a super-easy sweet treat, but it's probably a good idea to have some happy helpers to lend you a hand with the whisking.

You will need
  • 100g apricot jam/compote
  • Lemon juice
  • 600ml double cream
  • 50g icing sugar, sifted
  • 1tsp almond extract
  • 2 tbsp flaked almonds
  • 2 amaretti biscuits, crushed

STEPS

  • Place the apricot jam in a small bow, add a squeeze of lemon juice and mix together. 

  • Place the double cream, icing sugar, and almond extract in a large bowl and whisk together until you reach soft peaks. Make sure it's softly whipped and not stiff. 

  • Swirl the apricot jam into your cream, making sure you don't overwork or combine - you want ripples of jam throughout.

TO SERVE

  • Spoon the mixture into serving glasses.

  • Scatter over the flaked almonds and amaretti biscuits.
